We made these cookies in the office and honestly, the smell is divine! You can eat the cookies as it is now or if you'd like to take it up a notch, you may prepare some Royal Icing to pipe on the cookies like we did.
INGREDIENTS
1 Egg white
150g Icing Sugar
Food coloring of choice (Gel food color recommended)
METHOD
Over a pot of simmering hot water, bain-marie the egg white to kill bacteria. We whisk the egg to avoid cooking the egg over the hot steam. Prepare a cooking thermometer and measure the temperature of the egg white until it reaches roughly 62 Celcius.
Remove from heat and add in the icing sugar in batches. With an electric beater (or stand mixer), whisk the batter and add in the icing sugar continuously in small batches until the batter becomes smooth.
Divide the icing sugar into a few bowls and add the coloring of your choice for piping.
